This recipe went viral when TikTok creator Emily Mariko shared her simple yet genius method for reviving leftover salmon and rice. The secret? An ice cube! This trick creates steam that perfectly reheats the rice while keeping everything moist and delicious.

Ingredients

  • 1 cup cooked rice (preferably day-old)
  • 1 piece cooked salmon (leftover works perfectly)
  • 1 ice cube
  • 1-2 tbsp Kewpie mayonnaise
  • 1-2 tbsp soy sauce
  • Sriracha, to taste
  • Kimchi (optional)
  • Nori (dried seaweed) sheets
  • Furikake seasoning (optional)

Instructions

  1. 1Place cooked rice in a microwave-safe bowl. Flake the salmon over the rice.
  2. 2The ice cube trick: Place 1 ice cube on top of the rice and salmon.
  3. 3Cover with a damp paper towel and microwave for 1-2 minutes.
  4. 4Remove from microwave. The ice cube should be melted and the rice should be hot and steamy.
  5. 5Mash everything together with a fork until well combined.
  6. 6Add Kewpie mayo, soy sauce, and sriracha. Mix until everything is well incorporated.
  7. 7Top with kimchi, nori strips, and furikake. Mix one more time and enjoy!

Why the Ice Cube Works

The ice cube creates steam as it melts, which perfectly reheats the rice without making it dry or hard. This method is especially effective with day-old rice, which tends to dry out in the refrigerator.

Tips & Variations

  • Use Kewpie mayo: The Japanese mayonnaise has a richer, creamier texture than regular mayo.
  • Fresh salmon works too: You can use freshly cooked salmon if you don't have leftovers.
  • Customize the heat: Adjust sriracha to your preferred spice level.
  • Add avocado: Sliced avocado adds creaminess and healthy fats.
